FOOD ALLERGY AWARENESS RESOURCE GUIDE

Background

A food allergy is caused by a naturally occurring protein in a food or food ingredient, referred to as an “allergen.”


Responsibilities

Person in Charge in the Store: The person in charge of the store is responsible for food safety training that includes food allergy awareness.


Store Personnel: Food allergy awareness is essential in order to safely perform duties related to food preparation and service. Food allergy information is available on Dominos.com at Nutrition > Allergen Info.


How to Prep

Accurately label all foods and ingredients. Teach your employees about food allergy awareness. According to the FDA, these foods account for almost 90% or more of all food allergies.


  1. Milk

  2. Eggs

  3. Fish

  4. Tree nuts (walnuts, pecans, cashews)

  5. Peanuts

  6. Wheat (gluten)

  7. Soybeans

  8. Shellfish

  9. Sesame

Procedure

Thorough cleaning and sanitation are required to prevent cross contact between allergenic and non-allergenic ingredients.


Additional Information

The Food Allergen Labeling and Consumer Protection Act of 2004 (Public Law 108282) requires that all food packages be labeled with the names of food sources of any major food allergens.
